Curcumin is the main biologically active phytochemical compound of Turmeric. Curcumin is extracted from the dried
root of the rhizome Turmeric (Curcuma longa) by solvent extraction. The process of extraction requires the raw
material to be ground into powder and washed with a suitable solvent that selectively extracts the colouring matter.
After distillation of the solvent, this process yields an oleoresin with colouring matter content and other resinous
extractives. The oleoresin is then subjected to further washes using selective solvents to extract the curcumin
pigment, resulting in a powdered, purified food colour known as curcumin powder.
